Payesh is one of the most loved dessert recipes in Bengal. All most in each and every occasion Bengalis do have Payesh in their menu. It is basically a sweet made with rice, evaporated milk, sugar and loads and loads of dry fruits.
INGREDIENTS
1. Rice(Gobindobhog)-1/4cup
2. Mlik-1litre
3. Sugar-1/4cup
4. Bay leaf-1pieces
5. Cardamom-3pieces
6. Cashew-8pieces
7. Raisin-8pieces
STEPS OF PREPARATION
First wash the rice and soak in water for 30minutes.
In a kadai take 1 litre milk,add 1 bay leaf into it. let it comes to a boil.
Add the soaked rice and stir immediately so that the rice didn't stick to each other.
boil for 5 minutes.
Add the cashew(8pieces), raisin(8pieces) and 3 cardamom.
Boil the milk on medium heat till the rice cooked completely.(stir the milk in between otherwise milk will stick to the bottom.)
When rice cooked completely,add 1/4cup sugar in it.(don't add sugar before,because after adding the sugar the rice would not cook.)
Let the sugar melt and when the gravy comes to your desired consistency, switch off the flame.
Garnish with little more cashew and raisin.
