Chicken Ghee Roast is a popular Mangalorean Chicken recipe. Chicken Ghee Roast has a fiery red, tangy and spicy with a flavor of ghee roasted spices.

INGREDIENTS

1. Chicken - 500gm
2. Onion chopped - 1 piece
3. Curd - 3 TbSP
4. Ghee - 3 TbSP
5. Ginger - 1/2 inch
6. Garlic - 3 pieces
7. Tamarind - 2 TbSP
8. Jaggery - 1 TSP
9. Dry kashmiri red chili - 3 pieces
10. Dry red chili - 3 pieces
11. Coriander seeds - 1/2 TbSP
12. Cumin seeds - 1 TSP
13. Black paper - 1/2 TbSP
14. Fennel seeds - 1/2 TSP
15. Salt
16. Curry leaves - 10 leaves



PROCEDURE

In a pan dry roast 3 dry kashmiri red chili and 3 dry red chili, subsequently roast 1/2
TbSP  Coriander seeds, 1 TSP Cumin seeds, 1/2 TbSP Black paper, 1/2 TSP Fennel seeds.

Leave it to cool down.

In a mixer jar add dry roasted spices, 1/2 inch ginger, 3 garlic, tamarind and grind to a smooth paste.

Take 500gm chicken(boneless/with bones), add grinded paste, 1/2 TSP turmeric powder, 3 TbSP curd, 1TbSP salt.

Coat well and let it marinate for 1 hour.

In a kadai add 3TbSP ghee, add chopped onions and fry till onions are tarnsperant.

Add marinated chicken and jaggery.

Cover and cook for 20 minutes or until chickens are completely cooked.

Lastly add curry leaves and serve hot with polao,paratha,roti,nun.
